Creamy Cajun Shrimp Pasta Bake

  • 8 ounces penne pasta
  • 1 pound shrimp, peeled and deveined
  • 2 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the penne pasta according to the package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and garlic, and sauté until softened.
  4. Add shrimp and Cajun seasoning to the skillet, cooking until shrimp are pink.
  5. Stir in heavy cream and cheeses, mixing until well combined. Add cooked pasta and parsley, and stir to combine.
  6. Transfer the mixture to a baking dish and bake for 25-30 minutes until bubbly and golden on top.

Notes

  • Feel free to add more vegetables like spinach or zucchini.
  • This dish can be made ahead and refrigerated before baking.
