Cool Ranch Taco Crock-Pot Casserole

A delicious and easy recipe perfect for family dinners.

Ingredients

  • 1 pound ground beef
  • 1 packet Cool Ranch seasoning mix
  • 2 cups diced tomatoes
  • 1 can black beans, rinsed and drained
  • 2 cups corn, frozen or canned
  • 2 cups shredded cheddar cheese
  • 1 large onion, diced
  • 3 cups tortilla chips, crushed

Instructions

  1. In a skillet, brown the ground beef and onion over medium heat.
  2. Stir in the Cool Ranch seasoning mix and mix well.
  3. Transfer the mixture to a Crock-Pot.
  4. Add in the diced tomatoes, black beans, corn, and half of the cheddar cheese.
  5. Stir to combine all ingredients well.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. In the last 30 minutes of cooking, top with the remaining cheese and crushed tortilla chips.
  8. Serve hot and enjoy!

Notes

  • For a spicier casserole, add jalapeños to the mixture.
  • Feel free to substitute chicken or turkey for ground beef.
