  • 1 cup coconut milk
  • 1 cup sweetened condensed milk
  • 1 cup heavy whipping cream
  • 1 cup shredded coconut
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the cake mix according to package instructions, using coconut milk instead of water.
  3. Bake according to package directions, then remove from oven and allow to cool slightly.
  4. Poke holes in the warm cake using a fork.
  5. In a separate bowl, whisk together the sweetened condensed milk and half the coconut. Pour this mixture over the cake, ensuring it seeps into the holes.
  6. In another bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Spread the whipped cream over the cake and top with remaining shredded coconut.
