Chicken and Vegetable Stew

A hearty and delicious chicken and vegetable stew that’s easy to make and perfect for any occasion.

  • 1 pound chicken thighs, boneless and skinless
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat a bit of oil over medium heat and add the chicken. Cook until browned on all sides, then remove from pot.
  2. Add onions, carrots, celery, and garlic to the pot and sauté until softened.
  3. Return the chicken to the pot and add broth, potatoes, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until the chicken is cooked through and vegetables are tender.
  5. Remove chicken, shred it, and return it to the pot. Adjust seasoning if needed.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

  • Feel free to add your favorite vegetables to the stew for more flavor.
