Cherry Angel Cloud Cake

A light and fluffy dessert that combines the sweetness of cherries with the airy texture of angel food cake.

  • 1 cup cake flour
  • 1 1/2 cups sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups egg whites (about 10 large)
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and halved

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, sift together cake flour, sugar, and salt.
  3. In another bowl, beat egg whites and cream of tartar until soft peaks form.
  4. Add vanilla extract and continue to beat until stiff peaks form.
  5. Gently fold the dry ingredients into the egg whites.
  6. Pour the batter into an ungreased tube pan and sprinkle cherries on top.
  7. Bake for 35-40 minutes or until golden brown.
  8. Let cool in the pan before inverting onto a plate.

Notes

  • Make sure not to grease the pan for the best rise.
  • Serve with whipped cream or a dusting of powdered sugar.
