  • 1 pound ground beef
  • 1 small head of cabbage, chopped
  • 2 large carrots, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. Add the ground beef, cooking until browned. Drain excess fat.
  3. Stir in the diced tomatoes, beef broth, cabbage, carrots, thyme, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until vegetables are tender.
  5. Stir in Worcestershire sauce, adjust seasoning to taste, and serve hot.

Notes

  • For a spicier kick, add crushed red pepper flakes.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
