Beef Manhattan

A hearty and flavorful beef dish that brings comfort to the table.

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups frozen mixed vegetables
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook until translucent.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the beef chuck roast to the pot and sear on all sides.
  4. Pour in the beef broth and Worcestershire sauce, then season with salt and black pepper.
  5. Bring the mixture to a boil, then reduce to a simmer and cover.
  6. Cook for about 2 hours, or until the beef is tender.
  7. Add in the frozen vegetables and cook for another 20 minutes.
  8. Stir in the chopped parsley just before serving.

Notes

  • For extra flavor, you can marinate the beef overnight.
  • Serve with mashed potatoes or over egg noodles for a fuller meal.
