– 1 lb shrimp, peeled and deveined
– 1 tbsp olive oil
– 1 tsp chili powder
– ½ tsp cumin
– ¼ tsp garlic powder
– Salt & pepper to taste
– 2 cups cooked white or brown rice
– 1 ripe avocado, diced
– ½ cup cherry tomatoes, halved
– ¼ cup red onion, sliced
– ¼ cup chopped cilantro
For the Sauce:
– ½ cup sour cream or Greek yogurt
– ¼ cup cilantro
– 2 tbsp lime juice
– 1 tbsp water
– ¼ tsp salt
– Pinch of pepper
1. Toss shrimp with oil, chili powder, cumin, garlic powder, salt, and pepper.
2. Cook in skillet for 2–3 minutes per side until pink.
3. Whisk all sauce ingredients until smooth.
4. Assemble bowls: rice, shrimp, avocado, veggies.
5. Drizzle with sauce, garnish with cilantro, serve.
