Sweet & Spicy Korean BBQ Meatloaf

A delicious fusion of classic meatloaf with bold Korean flavors, combining sweet, spicy, and umami notes for a dish that’s truly unforgettable.

  • 1 ½ pounds ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon rice vinegar
  • 1 egg
  • 1 cup panko breadcrumbs
  • Green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
  • In a large bowl, combine all ingredients except green onions and sesame seeds. Mix evenly without overworking.
  • Shape the mixture into a loaf and place it in the prepared pan.
  • Bake for 40–45 minutes or until the internal temperature reaches 160°F (71°C).
  • In the last 10 minutes, brush with a glaze made from 2 tablespoons gochujang and 2 tablespoons honey.
  • Let the meatloaf rest for 5 minutes, garnish with green onions and sesame seeds, then serve.

Notes

  • For a milder version, reduce the gochujang or mix with ketchup.
  • Substitute panko with gluten-free breadcrumbs if needed.
