Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

A quick and creamy pasta recipe featuring spaghetti, spinach, and sun-dried tomatoes in a rich Parmesan cream sauce. Perfect for any occasion!

Ingredients

  • 12 oz spaghetti,
  • 2 tbsp olive oil,
  • 1 small onion (chopped),
  • 3 cloves garlic (minced),
  • ½ cup sun-dried tomatoes (chopped),
  • 1 cup heavy cream,
  • ½ cup Parmesan cheese (grated),
  • 4 cups fresh spinach, salt & pepper to taste, red pepper flakes (optional).

Instructions

  1. 1. Cook spaghetti to al dente. Reserve 1 cup pasta water.
  2. 2. Sauté onion in olive oil until soft. Add garlic and sun-dried tomatoes.
  3. 3. Stir in heavy cream and Parmesan. Simmer until smooth.
  4. 4. Add spinach and cook until wilted.
  5. 5. Toss pasta with sauce, season, and serve hot.

Notes

  •  Reserve pasta water to adjust sauce consistency.
  •  Add grilled chicken or shrimp for extra protein.
  •  Adjust seasoning to taste.
