Soft and Chewy Brown Sugar Amish Cookies

Ingredients

Scale

For the Cookies:

  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 cup unsalted butter, room temperature
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Glaze (Optional):

  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/21 tablespoon milk (optional)

Instructions

  • Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Set aside.
  • Cream Butter and Sugars:
    • In a large mixing bowl, use an electric mixer to cream together the butter, brown sugar, and powdered sugar until light and fluffy, about 2–3 minutes.
  • Combine Wet and Dry Ingredients:
    • Add the egg and vanilla extract to the butter mixture and mix until fully combined.
    • Gradually add the dry ingredients, mixing just until a soft dough forms.
    • For best results, chill the dough for 30–40 minutes to make it easier to handle and to produce thicker cookies.
  • Bake the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Roll the chilled dough into 1-inch balls and place them on the prepared baking sheet, spacing about 2 inches apart.
    • Bake for 10–11 minutes, or until the edges are lightly browned.
    • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Prepare the Glaze (Optional):
    • In a small bowl, whisk together the powdered sugar, vanilla extract, and maple syrup.
    • If the glaze is too thick, add milk a few drops at a time to reach your desired consistency.
    • Drizzle the glaze over the cooled cookies and allow it to set before serving.
