Snickerdoodle Banana Bread

A fusion of moist banana bread and cinnamon-sugar snickerdoodle cookies, this Snickerdoodle Banana Bread is a versatile treat for any time of day.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon cinnamon

Topping:

  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mash bananas. Mix in melted butter, vanilla, and egg.
  3. Stir in granulated sugar, brown sugar, baking soda, salt, cream of tartar, and cinnamon.
  4. Gently fold in flour until just combined. Avoid overmixing.
  5. Pour half the batter into the prepared pan. Sprinkle half the cinnamon-sugar topping. Add remaining batter and top with remaining cinnamon-sugar.
  6. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use overripe bananas for optimal sweetness.
  • Store in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
