  • 2 pounds corned beef brisket
  • 1 medium onion, chopped
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 1 small head of cabbage, cut into wedges
  • 2 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 2 bay leaves

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the chopped onion, beef broth, carrots, cabbage, garlic, peppercorns, and bay leaves.
  3. Cover and cook on low for 8-10 hours or until the meat is tender.
  4. Remove the corned beef, let it rest for a few minutes, then slice against the grain.
  5. Serve the sliced corned beef with the vegetables and broth.

Notes

  • For extra flavor, you can add some diced potatoes.
