Ingredients

  • 34 pounds beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 cups carrots, chopped
  • 1 onion, cut into wedges
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried thyme

Instructions

  1. Season the pot roast with salt and pepper on all sides.
  2. In a large skillet, sear the roast over medium-high heat until browned on all sides.
  3. Transfer the roast to a slow cooker and add the beef broth, carrots, onion, garlic, Worcestershire sauce, and thyme.
  4. Cover and cook on low for 8 hours or until the meat is tender.
  5. Once done, remove the roast and let it rest before slicing.
  6. Serve with the vegetables and broth.
