Potsticker Soup with Mushrooms & Bok Choy

A savory Asian-inspired soup featuring hearty potstickers, earthy mushrooms, and fresh bok choy in a flavorful broth. Perfect for weeknights!

Ingredients

– 1 package frozen potstickers (any filling)

– 4 cups chicken or vegetable broth

– 1 cup mushrooms (shiitake or cremini)

– 2 cups chopped bok choy

– 2 cloves garlic, minced

– 1-inch piece ginger, grated

– 2 green onions, sliced

– 2 tbsp soy sauce

– 1 tsp sesame oil (optional)

– 1/4 tsp red pepper flakes (optional)

Instructions

1. Heat sesame oil and sauté garlic, ginger, and white parts of green onions until fragrant.

2. Add mushrooms and cook until softened.

3. Pour in broth and soy sauce, bring to a gentle boil.

4. Add potstickers and simmer for 5–6 minutes or until tender.

5. Stir in bok choy during the last 2–3 minutes of cooking.

6. Adjust seasoning and serve with green onion garnish.

Notes

– Substitute bok choy with spinach or napa cabbage if needed.

– Add chili oil or red pepper flakes for a spicy kick.
