– 1 cup fresh parsley (chopped)
– 1/2 cup fresh mint leaves (chopped)
– 1/4 cup plain unsweetened yogurt
– 1/2 cup oat flour
– 1 tablespoon coconut oil
1. Preheat oven to 325°F (160°C) and line a baking tray with parchment paper.
2. Blend parsley, mint, yogurt, and coconut oil until smooth.
3. Combine with oat flour to form dough.
4. Roll dough to 1/4-inch thickness and cut shapes.
5. Bake for 20–25 minutes until firm and lightly browned.
6. Cool completely before serving.
