One-Pot Chicken Parmesan

A creamy, cheesy fusion of Chicken Parmesan and macaroni and cheese, cooked in one pot for an easy, flavorful, and satisfying meal.

  • 2 chicken breasts, diced
  • 8 oz elbow macaroni
  • 1 tbsp olive oil
  • 1 cup marinara sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Pour marinara sauce, chicken broth, and heavy cream into the pot. Stir well to combine.
  • Add elbow macaroni and bring the mixture to a simmer. Cook for 8-10 minutes, stirring occasionally, until pasta is tender and sauce thickens.
  • Reduce heat to low. Stir in mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth and creamy.
  • Serve warm, garnished with additional Parmesan or fresh parsley, if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes.
  • Substitute gluten-free pasta for a gluten-free version.
  • Store leftovers in the fridge for up to 3 days and reheat with a splash of milk or cream.
