nun’s puffs recipe

A light and airy French-inspired pastry made with simple ingredients like butter, milk, flour, and eggs. Crisp outside, custardy inside, and perfect for breakfast, dessert, or a sweet snack.

Ingredients

  • 1 stick butter (½ cup)
  • 1 cup milk
  • ¾ cup all-purpose flour
  • 4 large eggs
  • ½1 tablespoon sugar (optional)
  • Sugar for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with parchment.
  2. In a saucepan, combine butter and milk. Heat over medium until boiling.
  3. Remove from heat and stir in flour all at once. Return to heat and stir until it forms a dough ball.
  4. Let cool for 5 minutes. Add eggs one at a time, beating well after each until dough is smooth and glossy.
  5. Fill muffin cups ⅔ full. Sprinkle with sugar on top.
  6. Bake for 30–35 minutes until golden and puffed.
  7. Cool slightly and serve warm. Enjoy with honey or whipped cream.

Notes

  • Do not open the oven door while baking or the puffs may collapse.
  • Use a stand mixer to easily beat in the eggs.
  • Great served with fruit, jam, or filled with savory ingredients like cheese.
