Cookies:
– 1 cup unsalted butter, softened
– 1/2 cup powdered sugar
– 1 tbsp lemon zest
– 2 tbsp fresh lemon juice
– 1 tsp vanilla extract
– 2 cups all-purpose flour
– 1/4 cup cornstarch
– 1/4 tsp salt
Glaze:
– 1 cup powdered sugar
– 2–3 tbsp lemon juice
– 1 tsp lemon zest (optional)
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream butter and sugar until fluffy. Add lemon zest, juice, and vanilla.
3. Gradually add flour, cornstarch, and salt. Mix to form dough.
4. Roll into balls, flatten gently. Bake for 10–12 mins until edges are golden.
5. Let cool. Mix glaze ingredients and drizzle over cooled cookies. Allow to set.
