Lemon & Lime Cheesecake

A refreshing, creamy no-bake lemon & lime cheesecake made with a buttery biscuit base, tangy citrus filling, and elegant garnish.

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 150g caster sugar
  • 300ml double cream
  • Zest and juice of 2 lemons
  • Zest and juice of 2 limes
  • Lemon and lime slices for garnish

Instructions

  1. Mix crushed biscuits with melted butter and press into a springform pan. Chill for 15 minutes.
  2. Beat cream cheese and sugar until smooth. Gradually add cream, lemon zest/juice, and lime zest/juice. Whisk until thickened.
  3. Spread filling over the chilled base. Smooth the top.
  4. Chill for at least 4 hours or overnight.
  5. Garnish with lemon and lime slices before serving.
