Homemade Nut, Apple, and Banana Cake

A moist and flavorful cake made with mashed bananas, applesauce or chopped apples, and crunchy nuts. It’s the perfect blend of sweet and spiced, ideal for breakfast, brunch, or dessert.

  • 1¾ cups (220 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg (optional)
  • ½ cup (100 g) granulated sugar
  • ½ cup (110 g) packed light brown sugar
  • ½ cup (115 g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup (240 g) mashed ripe banana (about 2 bananas)
  • 1 cup (240 g) unsweetened applesauce or finely chopped apple
  • ½ cup (120 ml) plain yogurt or milk
  • 1 cup (120 g) chopped nuts (walnuts or pecans)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla.
  5. Mix in mashed banana, applesauce (or chopped apple), and yogurt (or milk).
  6. Fold in dry ingredients until just combined—do not overmix.
  7. Stir in chopped nuts evenly.
  8. Pour batter into prepared pan and smooth the top.
  9. Bake for 55–65 minutes, until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for the best flavor and texture.
  • Chopped apples add texture; applesauce makes a smoother crumb.
  • Toasted nuts add deeper flavor.
  • Great as a loaf or bundt cake.
  • Freezes well for up to 3 months.
