For the Shrimp:

  • 1 lb shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp chili powder

  • Salt & black pepper, to taste

Avocado Corn Salsa:

  • 1 cup corn (fresh, canned, or grilled)

  • 1 ripe avocado, diced

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, finely chopped

  • ¼ cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt & black pepper, to taste

Creamy Sauce:

  • ½ cup Greek yogurt or sour cream

  • 1 tbsp lime juice

  • 1 tsp honey

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

Instructions

    1. Prepare the Shrimp:

      • Toss shrimp with olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, and pepper.

      • Grill on medium-high heat for 2–3 minutes per side until cooked through.

    2. Make the Salsa:

      • Mix corn, avocado, tomatoes, red onion, and cilantro in a bowl.

      • Add lime juice, salt, and pepper. Toss gently.

    3. Make the Creamy Sauce:

      • Whisk together Greek yogurt, lime juice, honey, garlic powder, paprika, salt, and pepper.

    4. Assemble the Bowl:

      • Add a base of cooked rice, quinoa, or greens to bowls.

      • Top with grilled shrimp and salsa.

      • Drizzle with the creamy sauce and garnish as desired.

Notes

  • Add cooked rice or quinoa to make it more filling.

  • For a spicier kick, add jalapeño to the salsa.
