Instructions

  1. Drain the canned green tomatoes and pat them dry with a paper towel.
  2. In a bowl, mix the cornmeal, salt, black pepper, and cayenne pepper.
  3. Dunk each tomato slice in buttermilk, then coat in the cornmeal mixture.
  4. Heat oil in a pan over medium heat.
  5. Fry the coated tomato slices until golden brown, about 3-4 minutes per side.
  6. Remove and drain on paper towels.
