Fluffy Pistachio Pudding & Pineapple Delight

A quick, no-bake dessert combining pistachio pudding, pineapple, marshmallows, and pecans for a creamy, fluffy, and nostalgic treat.

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 (20 oz) can crushed pineapple, undrained
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans
  • 1 (8 oz) container Cool Whip, thawed

Instructions

  • In a large bowl, mix pistachio pudding mix with crushed pineapple (including juice) until creamy.
  • Gently fold in mini marshmallows and chopped pecans until evenly distributed.
  • Add Cool Whip and fold gently until smooth and fluffy.
  • Cover and refrigerate for at least 1 hour before serving.
  • Optional: Garnish with additional pecans or shredded coconut.

Notes

  • Use sugar-free pudding and whipped topping for a lower-calorie version.
  • For a nut-free option, omit the pecans.
  • Can be made a day in advance for optimal flavor melding.
