Dorito Casserole with Ground Beef

A cheesy, crunchy, and comforting Dorito Casserole made with layers of ground beef, creamy soup, and Mexican cheese—perfect for family dinners.

  • 1 bag (14 oz) Nacho Cheese Doritos
  • 2 pounds ground beef
  • 1 can (10¾ oz) cheddar cheese soup
  • 1 can (10¾ oz) cream of chicken soup
  • 1 can (12 oz) evaporated milk
  • 1 can (4 oz) diced green chilies
  • 23 cups shredded Mexican cheese blend
  • 1 packet taco seasoning (optional)
  • Optional toppings: sour cream, diced green onions, cherry tomatoes, avocado or guacamole, salsa

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×13 inch baking dish with nonstick spray.
  2. Brown the ground beef in a skillet over medium-high heat. Drain excess fat. Add taco seasoning, if using.
  3. Stir in cheddar cheese soup, cream of chicken soup, evaporated milk, and green chilies. Heat until bubbling.
  4. Lightly crush half of the Doritos and spread in the bottom of the baking dish.
  5. Spoon half of the beef mixture over the chips and sprinkle 1 cup of cheese on top.
  6. Repeat with remaining Doritos, beef mixture, and shredded cheese.
  7. Bake uncovered for 20 minutes or until the cheese is bubbly and golden.
  8. Let rest for 5 minutes before serving. Add toppings if desired.

Notes

  • Don’t crush the Doritos too fine—leave large chunks for texture.
  • You can swap in ground turkey or chicken for a lighter option.
  • Customize with beans, corn, or jalapeños for added flavor.
  • Store leftovers in the fridge up to 3 days; reheat in oven or microwave.
