  • 8 oz rotini pasta (or penne/fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 1 lb chicken breast, diced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup milk
  • ½ cup grated Parmesan cheese
  • ½ cup shredded cheddar cheese
  • 1 tsp smoked paprika
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt (adjust to taste)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the pasta: Boil salted water, cook pasta until al dente, drain, and set aside.
  • Season the chicken: Toss with 1 tbsp Cajun seasoning.
  • Cook the chicken: Heat oil in a skillet, cook chicken until golden brown, then set aside.
  • Cook the shrimp: Melt butter in the same skillet, sauté shrimp for 2–3 minutes per side until pink, then remove.
  • Make the sauce: Lower heat, sauté garlic, then stir in heavy cream, milk, cheeses, paprika, and remaining Cajun seasoning until smooth.
  • Combine everything: Add cooked pasta, chicken, and shrimp to the sauce. Toss to coat.
  • Serve: Garnish with fresh parsley and serve warm.

Notes

  • Adjust Cajun seasoning for spice preference.
  • Add pasta water to thin out the sauce if needed.
  • Store leftovers in an airtight container for up to 3 days.
