Cranberry Balsamic Ribeye Roast

Ingredients

  • 1 ribeye roast
  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cranberry sauce, balsamic vinegar, olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the ribeye roast.
  4. Place the roast on a roasting pan and cook for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  5. Let the roast rest for 15 minutes before slicing.
  6. Serve with additional cranberry sauce if desired.
