copycat beef and cheddar

A fast-food favorite made at home, this copycat beef and cheddar sandwich features tender deli roast beef, zesty red ranch sauce, and creamy cheddar on a toasted onion bun.

Ingredients

Scale
  • ½ cup ketchup
  • 2 tbsp light brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • 6 oz shredded sharp cheddar cheese
  • 2 cups low-sodium beef broth
  • 1 lb thinly sliced deli roast beef
  • 4 onion hamburger buns

Instructions

  1. In a bowl, whisk ketchup, brown sugar, vinegar, Worcestershire, garlic powder, and onion powder to make the red ranch sauce.
  2. In a saucepan, melt butter, stir in flour, then whisk in milk. Simmer until thick, then add cheddar cheese and stir until smooth.
  3. Bring beef broth to a simmer, add beef slices, and warm for 1–2 minutes. Remove and drain.
  4. Lightly butter and toast the buns in a skillet or oven.
  5. Spread red ranch sauce on the bottom bun, layer with beef, drizzle cheese sauce, and top with the other half.

Notes

  • Use ultra-thin roast beef for the most authentic texture.
  • Let cheese sauce sit a minute before serving to thicken slightly.
  • Store sauces separately for leftovers.
