  • Green food coloring, as needed

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake cups.
  3. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each. Stir in sour cream.
  5. Add green food coloring until desired color is achieved.
  6. Pour the cheesecake batter over the crusts and bake for 15-20 minutes.
  7. Remove from oven and let cool completely before removing from cups.
