  • 2 pounds chicken thighs
  • 1 pound baby potatoes
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season both sides of the chicken thighs with salt, pepper, and Italian seasoning.
  4. Add chicken to the skillet and sear until golden brown, about 5-6 minutes per side.
  5. Remove chicken from the skillet and set aside.
  6. Add minced garlic to the skillet and sauté for 1 minute.
  7. Pour in the heavy cream and Parmesan cheese, stirring until smooth.
  8. Add baby potatoes to the skillet and stir to coat them in the sauce.
  9. Return chicken to the skillet, nestling it among the potatoes.
  10. Bake in the oven for 25-30 minutes until chicken is cooked through and potatoes are tender.

Notes

  • For added flavor, marinate the chicken in garlic and herbs overnight.
  • Top with fresh parsley before serving.
