  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, sugar, and eggs until smooth.
  3. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to the pumpkin mixture and mix until combined.
  5. Fold in the chopped pecans.
  6. Spread the mixture evenly in a greased and lined baking pan.
  7. Bake for 25 minutes or until a toothpick comes out clean.
  8. Let it cool slightly, then roll the cake with parchment paper and cool completely.
  9. Unroll the cake, spread caramel filling, and re-roll. Chill before serving.
