These crispy canned salmon patties are a quick, nutritious, and budget-friendly dish made with pantry staples like breadcrumbs, eggs, and Dijon mustard. Ready in under 30 minutes, they’re perfect for weeknight meals or meal prep.
2 (14.75 oz) cans salmon, drained and flaked
2 eggs, beaten
½ cup breadcrumbs
¼ cup finely chopped onion
2 tbsp chopped parsley
1 garlic clove, minced
1 tsp Dijon mustard
½ tsp salt
½ tsp black pepper
2 tbsp olive oil (for frying)
In a bowl, mix together flaked salmon, eggs, breadcrumbs, onion, parsley, garlic, Dijon mustard, salt, and pepper until well combined.
Divide mixture and form into 8 patties.
Heat olive oil in a skillet over medium heat. Cook patties for 4 minutes per side, or until golden and crispy.
Drain on paper towels and serve with lemon wedges or your favorite sauce.
Chill the mixture before forming patties for better hold.
