– 1 loaf day-old brioche
– 150g cream cheese, softened
– 2 tbsp caster sugar
– 1 tsp vanilla extract
– ½ cup blueberries (fresh or frozen)
– 1 egg
– ½ cup milk
– ½ cup cream
– 1 tsp cinnamon
– Butter (for frying)
– Extra blueberries, icing sugar, and maple syrup for serving
1. Mix cream cheese, sugar, and vanilla until smooth. Fold in blueberries.
2. Slice brioche into 8 slices and form 4 sandwiches with the filling.
3. Whisk egg, milk, cream, and cinnamon for custard.
4. Dip each sandwich into custard for 20 seconds per side.
5. Fry in butter over medium heat for 3–4 mins each side until golden.
6. Serve with toppings.
