- 1 ½ cups crushed chocolate graham crackers
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 can (21 oz) cherry pie filling
- ½ cup dark chocolate shavings
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine crushed chocolate graham crackers and melted butter. Press mixture into the bottom of a springform pan to create the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Add eggs one at a time, mixing well after each addition. Finish with sour cream until well combined.
- Pour the cream cheese mixture over the crust and smooth the top.
- Bake for 50-60 minutes, or until the edges are set and the center slightly jiggles.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour.
- Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, top with cherry pie filling and sprinkle with chocolate shavings.
Notes
- For a richer flavor, use mascarpone cheese instead of cream cheese.
- Allow the cheesecake to rest at room temperature for 30 minutes before slicing for cleaner cuts.
