Snickerdoodle Banana Bread

A perfect blend of moist banana bread and the cinnamon-sugar flavor of snickerdoodles. This bread is easy to make and ideal for any time of day!

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon cinnamon

For the Topping:

  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • Combine mashed bananas, melted butter, vanilla, and egg in a bowl.
  • Add sugars, baking soda, salt, cream of tartar, and cinnamon. Mix well.
  • Fold in flour gently until just combined.
  • Pour half the batter into the pan. Sprinkle with half the cinnamon-sugar topping.
  • Add the remaining batter and top with the rest of the cinnamon-sugar mixture.
  • Bake for 55-65 minutes, or until a toothpick comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • Use overripe bananas for maximum sweetness.
  • Substitute cream of tartar with lemon juice or vinegar if unavailable.
  • Store in an airtight container for up to 3 days or freeze for up to 3 months.
