Step-by-Step Cooking Instructions for Crock Pot Green Enchilada Chicken Soup

Preparing a comforting and flavorful Crock Pot Green Enchilada Chicken Soup is easier than you might think. With a little preparation and the help of a trusty slow cooker, you can create a dish that’s rich in flavor and perfect for any occasion. Let’s walk through the steps to ensure your soup turns out creamy, zesty, and irresistible.

Preparation

Before you begin cooking, it's essential to prepare the ingredients for an efficient and seamless process:

• Dice the chicken thighs into bite-sized pieces to ensure even cooking.
• Drain and rinse the white beans to remove any excess sodium and maintain the soup’s clean flavor.
• Dice the cream cheese into small pieces. This step helps the cheese melt faster and blend more evenly into the soup.

Taking a few minutes to prep these components ensures your cooking process will be smooth and hassle-free.

Combining Ingredients in the Crock Pot

Once your ingredients are ready, it’s time to assemble the base of your soup:

• Place the diced chicken, white beans, green enchilada sauce, salsa verde, salt, and pepper into the crock pot. These ingredients form the foundation of bold flavors for the dish.
• Pour in the chicken broth and give everything a good stir to combine. This step ensures that all ingredients are evenly distributed for consistent cooking.

Cooking

Now it’s time to let the crock pot work its magic:

• Cover the crock pot and set it to your preferred cooking time:
  • Low heat: Cook for 5–6 hours for a more developed flavor.
  • High heat: Cook for 3 hours if you’re short on time.

During this step, the chicken becomes tender, the beans absorb the enchilada flavors, and the soup base develops its rich taste.

Adding Cream and Cheese

Once the initial cooking phase is complete, it’s time to incorporate the dairy elements for a luscious texture:

• In a small bowl, mix 1 tablespoon of cornstarch with 1 cup of heavy whipping cream to create a slurry. This mixture helps thicken the soup without clumps.
• Stir the slurry into the crock pot.
• Add the shredded Monterey Jack cheese and diced cream cheese.

Gently stir until the cheeses begin to melt and blend into the soup, creating a creamy consistency. If you’re curious about how to achieve perfectly melted cheese in soups, check out this article.

Final Cooking Stage

• Cover the crock pot again and cook for an additional 30 minutes to 1 hour. During this time, the cheese fully melts, and the soup thickens slightly. Be patient, as this final step ensures a smooth and velvety finish.

Serving

Now for the best part: serving your soup!

• Ladle the hot soup into bowls and garnish with:
  • Sliced avocado for creaminess.
  • Chopped cilantro for a burst of freshness.
  • A dollop of sour cream for tangy contrast.
• Serve warm and enjoy the comforting flavors of this hearty soup.

Can I Use Chicken Breasts Instead of Thighs?

Yes, you can use boneless, skinless chicken breasts as a substitute for thighs.
