This dish is not only delicious but also versatile. You can customize it with additional ingredients to suit your taste or what you have on hand. The creamy chicken filling is complemented perfectly by the crunchy Ritz cracker topping, creating a delightful contrast of textures. Let's dive into the details of this comforting casserole and see how you can make it in your own kitchen.
Ingredients:
- 3 cups cooked chicken, shredded or diced: Use leftover chicken, rotisserie chicken, or poached chicken breasts for this recipe.
- 1 can (10.5 oz) cream of chicken soup with herbs: Adds creaminess and flavor to the casserole.
- 1 cup sour cream: Contributes to the creamy texture and adds a slight tang.
- 1 tablespoon Italian seasoning: Provides a blend of herbs that enhances the overall flavor.
- 2 sleeves Ritz crackers, crushed: These will form the crispy, buttery topping.
- ½ cup butter, melted: Helps create a rich, golden-brown topping.
Instructions:
1. Preheat Oven:
Begin by preheating your oven to 350°F (175°C). This ensures the oven is at the correct temperature when you’re ready to bake the casserole.
2. Mix Ingredients:
In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, and Italian seasoning. Mix everything together until well combined. The cream of chicken soup and sour cream will form a rich, creamy base that coats the chicken thoroughly.
3. Prepare Baking Dish:
Transfer the chicken mixture to a 2-quart baking dish. Spread it out evenly to ensure that it cooks uniformly. A 2-quart dish is the perfect size for this casserole, allowing it to bake evenly without drying out.
4. Add Topping:
Sprinkle the crushed Ritz crackers evenly over the top of the chicken mixture. The crushed crackers should cover the entire surface of the casserole. Next, drizzle the melted butter over the crushed crackers. The butter helps the crackers brown and crisp up, adding a delicious buttery flavor to the topping.
5. Bake:
Place the baking dish in the preheated oven and bake the casserole uncovered for 25-30 minutes. The casserole is done when the top is golden brown and the filling is bubbly. The crispy topping should be a beautiful golden color, and the casserole should be heated through.
6. Serve and Enjoy:
Remove the casserole from the oven and let it sit for a few minutes before serving. This allows the filling to set slightly, making it easier to serve. Scoop the casserole onto plates and enjoy it while it’s warm.
Serving Suggestions:
- Side Dishes: Pair the casserole with a simple side salad or steamed vegetables for a complete meal. Green beans, broccoli, or a mixed greens salad would complement the casserole nicely.
- Garnish: Add a sprinkle of fresh parsley or chives on top for a pop of color and extra flavor.
- Accompaniments: Serve with crusty bread or dinner rolls to soak up any extra creamy sauce from the casserole.
Notes:
- Chicken Preparation: If you don’t have cooked chicken on hand, you can quickly poach chicken breasts or use a store-bought rotisserie chicken for convenience.
- Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
- Freezing: This casserole can be frozen before baking. Assemble the casserole as directed, cover it tightly with aluminum foil, and freeze for up to 2 months. To bake from frozen, add an extra 15-20 minutes to the baking time.
- Customization: Feel free to add vegetables like peas, carrots, or broccoli to the chicken mixture for added nutrition and flavor.
